Ingredients
- 1/3 cup vegetable oil, plus more for the baking dish
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 2/3 cup sugar
- 3 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 large egg
- 1 cup buttermilk
Directions
- Preheat oven to 400 degrees F
- Grease a 9 x 13-inch baking dish (vegetable oil or Crisco)
- Whisk cornmeal, flour, sugar, baking powder and salt in a large bowl.
- In a separate bowl, whisk egg, vegetable oil and buttermilk together.
- Slowly add the dry ingredients to the wet ingredients and combine with a spatula.
- When the batter is just combined, transfer to the baking dish and bake for 10-12 minutes or until a toothpick comes out clean.
- Transfer to wire rack and let cool for 15 minutes before serving.
