MU Gold Cornbread

Ingredients

  • 1/3 cup vegetable oil, plus more for the baking dish
  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 2/3 cup sugar
  • 3 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 large egg
  • 1 cup buttermilk

Directions

  1. Preheat oven to 400 degrees F
  2. Grease a 9 x 13-inch baking dish (vegetable oil or Crisco)
  3. Whisk cornmeal, flour, sugar, baking powder and salt in a large bowl.
  4. In a separate bowl, whisk egg, vegetable oil and buttermilk together.
  5. Slowly add the dry ingredients to the wet ingredients and combine with a spatula.
  6. When the batter is just combined, transfer to the baking dish and bake for 10-12 minutes or until a toothpick comes out clean.
  7. Transfer to wire rack and let cool for 15 minutes before serving.
