Ice cream cookie sandwiches are a great tailgate staple! Use your favorite pre-made cookies or get baking with the recipe below to try something new.
Ingredients
- 3/4 cup softened butter
- 1/2 cup sugar
- 1/2 cup packed brown sugar
- 1 large egg (room temperature)
- 2 tablespoons 2% milk
- 1 teaspoon vanilla extract
- 1-1/4 cups all-purpose flour
- 1-1/4 cups graham cracker crumbs (about 20 squares)
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/8 teaspoon ground cinnamon
- 2 cups semisweet chocolate chips
Filling
- 1 scoop per sandwich of your favorite ice cream (we recommend Buck’s Tiger Stripe ice cream!)
Directions
- In a large bowl, cream butter and sugar for approximately 5 minutes or until fluffy. Beat in the egg, milk, and vanilla. In a separate bowl, combine flour, graham cracker crumbs, baking soda, salt, and cinnamon. Gradually add to the creamed mixture until well combined. Stir in chocolate chips.
- On ungreased baking sheets, drop tablespoons of batter 2 inches apart. Bake at 375° until golden brown, 8-10 minutes. Set cookies on wire racks to cool.
- Place half of the cookies bottom-up and add a scoop of slightly softened ice cream to each cookie. Press top cookie lightly on top. Enjoy immediately or store in an airtight container in the freezer.
