Show Me Sandwich Cookies


Prep Time: 25 minutes // Bake: 10 minutes + cooling // Makes approx. 2 dozen

Ice cream cookie sandwiches are a great tailgate staple! Use your favorite pre-made cookies or get baking with the recipe below to try something new.

Ingredients

  • 3/4 cup softened butter
  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 1 large egg (room temperature)
  • 2 tablespoons 2% milk
  • 1 teaspoon vanilla extract
  • 1-1/4 cups all-purpose flour
  • 1-1/4 cups graham cracker crumbs (about 20 squares)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground cinnamon
  • 2 cups semisweet chocolate chips

Filling

  • 1 scoop per sandwich of your favorite ice cream (we recommend Buck’s Tiger Stripe ice cream!)

Directions

  1. In a large bowl, cream butter and sugar for approximately 5 minutes or until fluffy. Beat in the egg, milk, and vanilla. In a separate bowl, combine flour, graham cracker crumbs, baking soda, salt, and cinnamon. Gradually add to the creamed mixture until well combined. Stir in chocolate chips.
  2. On ungreased baking sheets, drop tablespoons of batter 2 inches apart. Bake at 375° until golden brown, 8-10 minutes. Set cookies on wire racks to cool.
  3. Place half of the cookies bottom-up and add a scoop of slightly softened ice cream to each cookie. Press top cookie lightly on top. Enjoy immediately or store in an airtight container in the freezer.
